Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté for 5-7 minutes until they are tender and fragrant.
  2. Add the minced garlic, diced bell pepper, zucchini, and chopped green beans. Continue to sauté for another 5 minutes.
  3. Pour in the vegetable broth and add the diced tomatoes along with their juices. Season with dried basil, dried oregano, salt, and pepper to taste.
  4. Bring the pot to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes.
  5. Serve hot, garnishing with Greek yogurt or fresh herbs if desired.

Notes

This soup freezes well for up to three months. For added protein, consider tossing in lentils or beans.
