- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté for 5-7 minutes until they are tender and fragrant.
- Add the minced garlic, diced bell pepper, zucchini, and chopped green beans. Continue to sauté for another 5 minutes.
- Pour in the vegetable broth and add the diced tomatoes along with their juices. Season with dried basil, dried oregano, salt, and pepper to taste.
- Bring the pot to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes.
- Serve hot, garnishing with Greek yogurt or fresh herbs if desired.
Notes
This soup freezes well for up to three months. For added protein, consider tossing in lentils or beans.
