Delicious and crispy Zucchini Fritters made with fresh ingredients, perfect for snacks or side dishes.

- 2 medium zucchini, grated
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Mozzarella cheese, shredded
- 1/4 cup all-purpose flour
- 1 large egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Start by grating the zucchini using a box grater. Once grated, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture.
- In a medium bowl, combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, minced garlic, salt, and pepper. Mix well until everything is evenly combined.
- Heat about 1/4 inch of olive oil in a frying pan over medium heat.
- Scoop portions of the mixture (about two tablespoons) and carefully spoon them into the pan, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
- Once cooked, remove the fritters from the pan and drain them on paper towels.
Notes
Serve with a dollop of sour cream or tzatziki for added flavor.
