Description

Delicious and crispy Zucchini Fritters made with fresh ingredients, perfect for snacks or side dishes.


Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Start by grating the zucchini using a box grater. Once grated, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture.
  2. In a medium bowl, combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, minced garlic, salt, and pepper. Mix well until everything is evenly combined.
  3. Heat about 1/4 inch of olive oil in a frying pan over medium heat.
  4. Scoop portions of the mixture (about two tablespoons) and carefully spoon them into the pan, flattening them slightly with the back of the spoon.
  5. Fry the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
  6. Once cooked, remove the fritters from the pan and drain them on paper towels.

Notes

Serve with a dollop of sour cream or tzatziki for added flavor.
