Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, fresh
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles in boiling water until al dente.
  3. Sauté the onion, garlic, zucchini, and bell pepper until softened.
  4. Add the spinach and cook until wilted.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, sautéed vegetables, and a layer of mozzarella.
