Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, fresh
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles in boiling water until al dente.
- Sauté the onion, garlic, zucchini, and bell pepper until softened.
- Add the spinach and cook until wilted.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, sautéed vegetables, and a layer of mozzarella.
- Repeat layers and finish with noodles, marinara sauce, and remaining mozzarella and parmesan.
- Bake for 45 minutes until bubbly and golden.
- Let cool for 10 minutes before slicing.
