- 1 lb chicken breasts
- 1 can white beans, drained and rinsed
- 1 can diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup heavy cream or coconut cream
- 2 cups spinach or kale
- Toppings: avocado, cilantro, sour cream
Instructions
- Sauté the diced onion and minced garlic in a large pot with a splash of oil until fragrant, about 3-4 minutes.
- Add the chicken breasts to the pot and cook until browned on both sides.
- Stir in the diced green chilies, white beans, cumin, chili powder, salt, and pepper.
- Pour in the chicken broth and let it simmer for 15-20 minutes.
- Shred the chicken back into the pot once cooked through.
- Stir in the heavy cream and spinach or kale until the greens wilt down.
- Ladle the chili into bowls and top with avocado, cilantro, and sour cream.
Notes
For extra flavor, consider using bone broth instead of regular chicken broth. You can also use pre-cooked chicken to save time.
