- 2 lbs chicken thighs
- 1 cup peanut butter
- 1 cup coconut milk
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped peanuts and cilantro for garnish
Instructions
- Combine the peanut butter, coconut milk, soy sauce, honey, lime juice, minced garlic, and grated ginger in your slow cooker. Stir until everything is smooth and well-blended.
- Place the chicken thighs into the slow cooker, making sure each piece is well coated with the sauce.
- Sprinkle some salt and pepper over the chicken to taste.
- Cover the slow cooker and set it to low. Cook for 6 to 8 hours or until the chicken is tender and fully cooked.
- Shred the chicken right in the sauce using two forks.
- Dish the chicken over rice and sprinkle with chopped peanuts and fresh cilantro for garnish. Enjoy!
Notes
For an extra kick, add some red pepper flakes or Sriracha to the sauce. If a thicker sauce is desired, mix in a cornstarch slurry towards the end of cooking. This recipe can be easily adapted with different proteins like shrimp or tofu.
