Description

A delicious and filling meal combining grilled chicken, fresh vegetables, and creamy avocado with a zesty lime flavor.


Ingredients

  • 1 cup rice
  • 2 grilled chicken breasts, sliced
  • 1 cup sweet corn (canned or fresh)
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice according to the package instructions, about 15-20 minutes.
  2. In a skillet, heat olive oil over medium heat.
  3. Add the sliced grilled chicken, corn, diced bell pepper, smoked paprika, salt, and pepper.
  4. Cook until heated through, around 5 minutes.
  5. Assemble your bowl by layering rice, chicken and corn mixture, avocado slices, and squeezing fresh lime juice on top.
  6. Garnish with fresh cilantro.
  7. Serve immediately and enjoy!

Notes

Use leftover grilled chicken to save time. Feel free to add more veggies like tomatoes or cucumbers. Adjust lime juice to your taste.
